My mom worked three jobs so when the weekend came she would make these delicious apple and cinnamon pancakes and spend some time with me and my brother

1 cup yogurt or kefir
1 cup milk
2.5 cups flour
3 tablespoons oil
3/4 cup sugar
2 teaspoons baking soda
1 teaspoon lemon juice
1/2 teaspoon salt
1 teaspoon vanilla sugar
1/2 teaspoon cinnamon
1.5 cups diced apple or shredded
Whip eggs and sugar till thick and light in color.
Add vanilla, cinnamon, milk, oil and yogurt. Whip for a minute add soda mixed with lemon and then the flour. Beat for 2 minutes until batter is very smooth.
Now fold in apples and let the batter rest in refrigerator until needed.
In a frying pan add oil and when pan is hot enough add one scoop at a time of batter.
Flip over when you see many bubbles.
Serve with sour cream
