-200 mL of warm water
-350g of flour
-3 tablespoons of melted butter (warm)
-1 teaspoon of salt (if butter is unsalted)
-2 teaspoons of sugar
For this amount, I used 1 and 1/2 cans of sour cherries ( 1 can = 24.7 oz)
For the syrup
-2/3 of a can of cherry juice
-1 tablespoon of corn starch
-sugar to taste
-3 tablespoons of sour cream
We start by making the dough:
In the ball combine flour, salt sugar, butter, I use electric mixer with a hook attachment and mix for about 3 to 4 min or knead your dough by hand for about 8 to 10 min, cover your dough with plastic wrap and let it rest for 15 min. Meanwhile drain your cherries and safe juices for later. Add a tea spoon of corn starch to your cherries and mix .
Take a 1/3 of the dough and roll in a circle of 1 mm thick, take a glass and cut a small circles . Fill this circles of dough with cherries and close tight , continue making pierogi from the rest of the dough.
Get your pot with water to a boil , add salt and cherry pierogi , when they come up to the top boil for 2 min and take out.
Making cherry syrup: in a small sause pan pour your cherry juice bring to a boil . Mix together one tablespoon of water with one tablespoon of cornstarch and add to boiling syrup. Cook for about 30 seconds. Then mix with sour cream, add sugar if needed.
