Crock Pot Green Chili Chuck Roast
I tried something just a bit different the other day when I decided we were having roast for supper and this turned out melt in your mouth delicious. The roast just fell apart and it was so tender and juicy. The green chilies really added to the flavor, giving the roast a nice subtle kick. I didn’t have carrots on hand or I would have thrown them in along with the potatoes.
I’m not really sure what is going on with the price of red meat, particularly roast beef. The other week I went to pick up a roast or two and this same roast was $18.00, in fact I think all the beef roasts were way up in price. Needless to say I didn’t buy any but then earlier this week I go back to the store and all the beef roasts were back under $10.00. Well, I picked up more than a couple in fear of the over $18.00 coming back soon. I like to use chuck roasts to make stews and I’ve been craving Nannie Hembree’s arsh stew which I plan to make soon. Now’s when I wish I had a couple cows in a pasture, pigs in a pen and some chickens. I grew up helping out on Papa and Nannie Polly’s farm, I could maybe do it again with a good bit of jogging of my memories and advice from Daddy but where we live that’s just not going to happen but it sure is a nice thought.
