Friends who are looking for an easy and delicious fish option for Christmas Eve!
Slice four potatoes with a mandolin…about 1/8 of an inch. Toss with olive oil, salt, pepper and garlic power. Roast at 415 on parchment paper until golden…flip at the half way point. Set aside.
Once done, arrange the potatoes in a cast iron skillet (rub the bottom with soft butter) in a spiral format, then place some cod loin (also seasoned–olive oil, salt and pepper) on top. Roast at 400 for 10 minutes, then broil for an additional 3-5, depending on your oven and how much you like your fish cooked….in the meantime, saute two finely diced garlic gloves and two anchovies in two tablespoons of butter and two tablespoons of olive oil…once browned, add a tablespoon of capers and two tablespoons of lemon juice, plus some fresh parsley.
When the fish comes out of the oven, spoon the dressing over the top and serve!
