14-16 plantains or plátano macho.
1 1/4 cups of rice
1 1/2 sticks of cinnamon
Sugar to taste and some for the top
A 3 finger pinch of salt
Milk of choice
Oil for frying
A night before soak the rice in water enough to cover 1/2 in inch over the top of the rice.
The next day:
Boil bananas until they burst out of the shell.
While they boil you can boil the cinnamon with 2 cups of water and let it boils until it turns a brownish color.
Now we the bananas need to be put in a colander to drain all the water and while they drain we make the custard for for the filling.
The rice and water goes in a blender. If you have a high speed blender no need to strain it but if you don’t have a high speed blender it needs to be strained and you may have to add more rice.
Now you add that to a pot and begin to to stir and add in milk enough to be able to stir it. You also add the sugar and the water that was boiled with the cinnamon. It will start to look pudding like and that’s when it’s done. Make sure to keep stirring throughout the whole time or you’ll have burnt custard. You’ll have to restart the process if it burns.
Now that the bananas are done we put them through the grinder.
Once everything is grinder we knead it just to mix everything together. It has to be the consistency of masa for tortillas. If it’s mushy you can add flour to make it the consistency of your liking.
Now the fun part time to make them. You will make tortillas out of the ground up plantains and fill them with the custard. Make sure you cover them completely or your have oils splattering all over the place. Once they are done you add some sugar on top and enjoy. It sounds like a lot but it’s very easy.
