I love huevos rancheros, but a lot of places don’t make the sauce the way I like it. So I’ve been experimenting. This salsa is pretty easy. 5 roma tomatoes, 1/4 cup diced onion, half a diced jalapeño, 4 minced garlic cloves, salt, pepper, cumin, chicken bullion, crushed red pepper (since I only had half a jalepeno), water.
Add oil to pan
Saute onion and jalapeño
Add garlic and cook a minute
Add diced tomatoes
Add a little water and cook down – smash tomatoes as they soften
Keep adding 1-2 ounces of water as you go to keep desired consistency
Add sprinkle of cumin, chicken bullion, crushed red pepper,, salt to taste
