Low Carb Blueberry Bread
5 eggs medium
1/2 c blueberries
3 table spoon butter softened
2 c almond flour
2 tablespoon coconut flour
3 tablespoon heavy whipping cream
1 1/2 teaspoon baking powder
1/2 c Erythritol
1 teaspoon vanilla extract
*Preheat your oven to 350°F Grease an 8.5 x 4.5-inch loaf pan or line it with parchment paper.
*Add eggs, vanilla extract, and sweetener into a bowl. Use a hand mixer for 2-3 minutes or until the eggs look frothy.
*Mix again after adding in heavy whipping cream.
*Combine the dry ingredients in a different bowl
*Combine the wet and the dry ingredients using the mixer…. be sure to add in the butter while mixing.
*Fold in the blueberries and then transfer the batter to a loaf pan.
*Bake for about 45 minutes at 350F or until cooked through.
