Someone was asking about a recipe for Mushroom Soup for Christmas Eve. I looked for the post but didn’t see it. So I’m posting mine here.
Since you don’t eat meat for Wogilijna I use baby bella mushrooms sliced. They give a deep flavor and meaty taste without the use of meat, chicken or beef broth. Mushroom soup for Christmas Eve
INGREDIENTS
Mushroom Soup for Wogilijna
1lb of sliced baby bella mushrooms (or you can mixed ½ baby bella with ½ Button mushrooms. (baby bellas will make a darker richer broth.
6 cups of water (or vegetable broth) I use plain water since the mushrooms are rich
6 cloves of garlic minced (fresh is the best)
2T red wine vinegar (you can use white, or apple cider) I prefer the red wine type for the extra flavor.
2 carrots
1 rib of celery
1/4 of an onion diced
1t black pepper
Salt (careful if using broth that may contain salt already)
2 Tbs of butter
2 Tbs of sour cream
INSTRUCTIONS
Put mushrooms in the water with the other ingredients except the sour cream . Boil covered on low for 30 minutes, or until mushrooms are cooked.
When the mushrooms are cooked strain out carrots and celery and discard them or save to add to other soups or gravies.
The next step can be done 2 ways, Either temper the sour cream with a bit of the soup broth and when creamy stir into the rest of soup or you can cool soup completely and then add sour cream. You can always add more salt, pepper, or vinegar to taste. Eat with rye bread. Enjoy *You can make this soup when you have a chest cold or sore throat. Add a few more cloves of minced garlic and make soup as directed. This was always our go to when not feeling well, it really helps.
