One of my favorite Polish side dishes. Great with dinners, sandwiches or just by itself. There are many different versions of this salad, but here’s my favorite.
P.S. I must say, I cook for a family of 5 so my portion might be bigger then expected.
POLISH VEGETABLE SALAD
Potatoes – 4 medium / large ( peeled and chopped )
Carrots – 2 large ( peeled and chopped )
Eggs – 10 hard boiled ( peeled and chopped )
Sweet Peas – 1 can
Green Apple – 1 large ( peeled and chopped )
Pickles in Brine – 5 ( these MUST be POLISH brine pickles – peeled and chopped )
Green Onions – little more then half of a bunch, about 2/3rd to 3/4ths of a bunch depending on the bunch size
OPTIONAL – Leak – only the white part ( if you choose to include it then only chop 3 to 4 of a green onion )
Put potatoes and carrots in a pot of water ( peel the carrots first, the potatoes are easier to peal after they are boiled ) Add extra water if you want to boil the eggs in the same pot. Or you can boil the eggs separate. If you boil together, let the eggs boil for 10 min. Pull one egg out, peel it and cut it open to make sure it’s hard boiled. If done, pull the rest of the eggs out and peel them. Let the potatoes and carrots continue cooking till they are done. Cooked but not too soft. You can check if they are cooked by sticking your fork in it. If they are soft, pull them out and let them cool. Peel your potatoes. The skin should slide of really easy when they are still warm.
Time to start chopping!!! Chop up your potatoes, carrots, green onions, apple ( peel apple first ) & eggs. Add the can of Sweet Peas ( make sure you drain the water out first ). Make sure you peel the pickles before you chop them up. If you are adding the leaks, slice them long way in half and then take the half’s and slice them long way in half again. Now slice them up very thinly, so you have thin bite size slices ( only the white part )
Once all your veggies are chopped put them in a big bowl.
Add Mayo – start with two heaping spoonfuls ( mix all ingredients and slowly add more mayo one spoon at a time to your liking )
Salt & Pepper to taste.
Mix All ingredients & Enjoy!!
