Shrimp & Spinach Alfredo (homemade Alfredo Sauce recipe included)
Good afternoon, what a beautiful weekend we had and I hope you did as well. I fixed this dish for us yesterday, I was planning on making shrimp & spinach lasagna but come to find out I don’t have any lasagna noodles so I changed my other mind and came up with this dish. I realized I didn’t have any alfredo sauce on hand so I called my cousin who makes his own and got the recipe and it is so easy to make, I will never buy a jar again after seeing just how easy this is. You could use cooked chicken in place of the shrimp if you like as well. The alfredo sauce makes around 3 1/2 cups, I put leftovers in the fridge to make mac & cheese pizzas later this week with it.
Growing up with an old fashioned Southern family the last thing you would find on the kitchen table, other than spaghetti, was Italian food. I don’t even think we thought of spaghetti as being Italian back then. When I was in high school and the lunch ladies served up lasagna that was an eye opener for me. Now, it didn’t happen often but they would fix it every now and again and I loved it. Mama did try her hand at making lasagna but come to find out it just wasn’t her cup of tea. As I ventured out on my own I tried all kinds of foods that I hadn’t eaten growing up and since I couldn’t afford to eat out often I had to learn to make a lot of those dishes on my own. As with most of my creations I had a lot of failures but also a lot of successes as well. To this day, pasta dishes to me are the ones that you can really be the most creative with and if you have been following me for a while you know I have a good many pasta recipes on here to go along with all the Southern meals I fix too. That’s what I love about cooking, you can cook and create what you enjoy and share it with those you love.
Homemade Alfredo Sauce
