ICYMI – I made Stromboli a few days ago! The dough is my 2 ingredient pizza crust and the filling is spinach and queso fresco! Really, it’s so easy!
Dough
1.5cups low moisture part skim shredded mozzarella.
2/3cup almond flour
1 tsp baking powder (optional for leavening)
1 TBLS Italian seasoning (optional for flavor)
Filling
Spinach about 1 cup when cooked
Minced garlic to taste
Onion powder to taste
Queso fresco 2-4oz (or your preferred crumbly cheese such as feta)
Melt mozz for 60-90 seconds until consistency is like taffy. Add remaining ingredients, mix to combine.
Lay out dough on silicon mat or parchment paper. Roll into a rectangle. Set dough aside.
Lightly cut up a few handfuls of fresh spinach. In a non-stick skillet on the stove cook down spinach with some minced garlic and onion powder to taste. Add a little avocado oil if needed to prevent sticking.
Transfer spinach to a bowl, squeeze spinach to remove the liquid. You can use a cheese cloth, I used paper towels and it worked well for me.
Once the liquid is removed, place the spinach down the center of the dough.
Top spinach with hard/crumbly cheese of choice. I prefer Queso Fresco but you can use feta or other crumbly cheese of choice.
Slice dough at a slight angle about 1.5” apart going up each side from outside to the spinach mixture. Next, start weaving dough slices from bottom to top.
Ovens vary, I baked mine at 350F for 12-14 minutes.
