Vegan Chocolate Cake-No Eggs, Milk and Butter
My Grandmother called “depression cake” because the recipe is from the time of the Great Depression, when things like eggs, milk, butter and sugar were really expensive.
Ingredients:
1 1/2 cups all sifted flour -210 g
3/4 cup sugar-150 g
1/4 cocoa-40 g
1 tsp baking soda-7 g
1/4 tsp salt-3 g
1 cup water-240 ml
1/3 cup oil-80 ml
1 tsp vanilla extract -7 ml
1 Tbsp lemon juice – 15 ml
Method of preparation:
In a bowl, combine the sugar, sifted flour, sifted cocoa and baking soda.
In a another bowl combine water, oil, lemon juice, and vanilla.
Add liquids to dry ingredients and mix. Pour the mixture in the 20 cm/8 inches pan.
Bake 30-35 min in a preheated oven at 180 C/350 F.
Decorate it with chocolate and walnuts, coconut or dust with powdered sugar.
