The other day I was down at our new produce market that recently opened up and they had some of the pretties zucchini I have seen in a long while. I purchased a couple and today I used the leftovers of what I hadn’t used to make a small batch of salsa. I make this a good bit when we are camping so I can used up leftovers of cucumber or zucchini that we didn’t eat, yes…cucumbers work just as well as the zucchini in this recipe. It’s a light and refreshing snack, it goes well with regular tacos and fish tacos too. I always keep a jar of diced jalapenos (found in the pickle section of the grocery store) in the fridge since jalapenos are not as easy to come by in my neck of the woods.
You know, the closest thing I had to salsa growing up was probably Nanny Polly’s green tomato relish. To me that was about as close as I got to what would resemble salsa back then. I can remember when Nannie would put up green tomato relish she would always leave some in a saucer for Maw Rackley to eat with soda crackers. I still do that, there’s always just a smidgen that doesn’t fit in my jars and I’ll snack on it with soda crackers like Maw Rackley did. I guess maybe we did have our own version of salsa growing up, it just came in the form of relish. I am looking forward to Summer when my garden comes in, I’m canning salsa, all sorts of relish and making all kinds of pickles this year. Maybe that’s putting the cart before the horse since I ain’t got a thing planted yet as it’s still too early here. But, it’s sure nice to think about.
