
One-Pan Garlic Herb Chicken with Potatoes & Green Beans Recipe
Ingredients:
- 2 large chicken breasts (or 4 chicken thighs)
- 300 g (2 cups) baby potatoes, halved
- 200 g (1½ cups) green beans, trimmed
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 1 tablespoon lemon juice (optional)
Instructions:
- Preheat oven to 200°C (400°F).
- In a small bowl, mix olive oil, garlic, thyme, rosemary, paprika, salt, and pepper.
- Place chicken and potatoes on a baking sheet. Drizzle half of the herb mixture over them and toss to coat.
- Bake for 20 minutes.
- Remove from the oven, add green beans, and drizzle with the remaining herb mixture. Toss everything lightly.
- Return to oven and bake for another 15–20 minutes, until chicken is cooked through and potatoes are tender.
- Drizzle with lemon juice before serving, if desired.
Serve warm — a complete meal on one pan!
