One-Pan Garlic Herb Chicken with Potatoes & Green Beans Recipe

Ingredients:

  • 2 large chicken breasts (or 4 chicken thighs)
  • 300 g (2 cups) baby potatoes, halved
  • 200 g (1½ cups) green beans, trimmed
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 1 tablespoon lemon juice (optional)

Instructions:

  1. Preheat oven to 200°C (400°F).
  2. In a small bowl, mix olive oil, garlic, thyme, rosemary, paprika, salt, and pepper.
  3. Place chicken and potatoes on a baking sheet. Drizzle half of the herb mixture over them and toss to coat.
  4. Bake for 20 minutes.
  5. Remove from the oven, add green beans, and drizzle with the remaining herb mixture. Toss everything lightly.
  6. Return to oven and bake for another 15–20 minutes, until chicken is cooked through and potatoes are tender.
  7. Drizzle with lemon juice before serving, if desired.

Serve warm — a complete meal on one pan!
