🥔 Air Fryer Garlic Parmesan Hasselback Potatoes

📝 Ingredients:

  • 4 small to medium potatoes (Yukon Gold or red work great)
  • 2 tbsp olive oil or melted butter
  • 2–3 garlic cloves, minced
  • ¼ cup grated Parmesan cheese
  • 1 tsp dried parsley (or fresh for garnish)
  • Salt and black pepper to taste
  • Optional: sprinkle of paprika or Italian seasoning

🔪 How to Slice Hasselback Potatoes:

  1. Place each potato between two chopsticks or wooden spoons.
  2. Slice thinly across the potato (about 2–3 mm apart), stopping at the chopsticks so you don’t cut all the way through.

🍳 Instructions:

  1. Prep the potatoes:
    • Rinse and pat dry the potatoes.
    • Make the Hasselback slices as above.
    • Gently fan open the slices to allow flavors in.
  2. Make the garlic oil:
    • Mix olive oil or melted butter with minced garlic, salt, pepper, and optional spices.
  3. Brush and air fry (Part 1):
    • Preheat air fryer to 190°C (375°F).
    • Brush the garlic mixture all over and between the potato slices.
    • Place potatoes in the air fryer basket.
    • Cook for 20–25 minutes, depending on potato size.
  4. Add Parmesan (Part 2):
    • Carefully open the air fryer and sprinkle Parmesan cheese over and into the slices.
    • Air fry for an additional 5–8 minutes until golden and crispy.
  5. Garnish and serve:
    • Sprinkle with parsley and extra cheese if desired.
    • Serve hot with sour cream or ranch on the side!

🔧 Tips:

  • For even cooking, try to use potatoes of similar size.
  • You can microwave the potatoes for 4–5 minutes beforehand to reduce air fry time.
  • Add bacon bits or mozzarella between the slices for extra flavor.
