Instructions:
- Activate the yeast: In a small bowl, dissolve the yeast in warm milk. Let it sit for about 5-10 minutes until it becomes frothy.
- Mix the dough: In a large mixing bowl, combine the yeast mixture with sugar, salt, and about 1 cup of flour. Add in the softened butter, egg yolks, and vanilla extract. Gradually mix in the remaining flour until a soft dough forms.
- Knead the dough: On a floured surface, knead the dough for about 5-8 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1-1.5 hours or until doubled in size.
- Shape the doughnuts: After the dough has risen, punch it down and roll it out to about ½ inch thickness. Use a doughnut cutter or two differently sized circular cookie cutters to cut out doughnut shapes. Place the cut doughnuts on a baking sheet lined with parchment paper. Cover and let them rise again for about 30 minutes.
- Heat the oil: In a deep, heavy-bottomed pot, heat vegetable oil to about 350-375°F (175-190°C).
