Strawberry Shortcake Cheesecake Recipe

Ingredients:

For the Shortcake Crust:

  • 2 cups crushed golden Oreos (or vanilla wafers)
  • 6 tablespoons unsalted butter, melted

For the Cheesecake Layer:

  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 tablespoon cornstarch

For the Strawberry Layer:

  • 2 cups fresh strawberries, chopped
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 cup water

For the Whipped Topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

For the Shortcake Crumble:

  • 1/2 cup golden Oreos, crushed
  • 1/2 cup freeze-dried strawberries, crushed
  • 2 tablespoons butter, melted

Method: Step-by-Step

Step 1: Prepare the Shortcake Crust

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix the crushed golden Oreos with the melted butter until it resembles wet sand.
  3. Press the mixture evenly into the bottom of a 9-inch springform pan. Use the back of a spoon or a flat glass to compact it firmly.

Step 6: Create the Shortcake Crumble

  1. In a small bowl, mix the crushed golden Oreos, freeze-dried strawberries, and melted butter until crumbly.
  2. Sprinkle generously over the whipped cream and strawberry topping.
