Crockpot Ranch Pork Chops and Potatoes
Ingredients:
- 4 boneless pork chops
- 1 ½ pounds baby potatoes, halved (or russet potatoes cut into chunks)
- 1 packet ranch seasoning mix (about 1 oz)
- 1 can (10.5 oz) cream of chicken soup (or cream of mushroom)
- ½ cup milk or heavy cream
- 1 tbsp olive oil or melted butter (optional)
- Salt & pepper to taste
- Chopped parsley for garnish (optional)
Instructions:
- Prep the Crockpot:
Lightly spray the inside of the crockpot with non-stick cooking spray. - Layer Potatoes:
Add the halved baby potatoes to the bottom of the crockpot. Sprinkle lightly with salt and pepper. - Add Pork Chops:
Season pork chops with a bit of salt and pepper on both sides. Place them on top of the potatoes. - Make the Sauce:
In a small bowl, mix the ranch seasoning, cream of chicken soup, and milk until smooth. - Pour Over:
Pour the ranch mixture evenly over the pork chops and potatoes. Drizzle with olive oil or butter for extra richness (optional). - Cook:
- Cook on LOW for 6–7 hours
- Or on HIGH for 3–4 hours
(Pork should be tender and potatoes soft.)
- Serve:
Garnish with chopped parsley if desired. Serve warm with a side of green beans or a simple salad.
Tips:
- You can use bone-in pork chops, but adjust cooking time if they’re thicker.
- Add chopped carrots or green beans for a veggie twist.
- Swap cream of chicken with cream of mushroom for a deeper flavor.
