Ingredients:
For the cake:
- 3 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, at room temperature
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup whole milk
- Zest of 1 lemon
For the filling:
- 2 cups fresh berries (strawberries, blueberries, raspberries)
- 1/4 cup granulated sugar
- Juice of 1 lemon
For the frosting:
- 3 cups powdered sugar
- 1 cup unsalted butter, at room temperature
- 1 teaspoon vanilla extract
- 2 tablespoons heavy cream
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined. Stir in the lemon zest.
- Divide the batter evenly among the prepared cake pans. Smooth the tops with a spatula.
- Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
- While the cakes are baking, prepare the filling. In a bowl, combine the fresh berries, sugar, and lemon juice. Toss gently to coat the berries. Let them macerate for about 15 minutes.
- Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
- To make the frosting, beat the powdered sugar, butter, vanilla extract, and heavy cream together in a bowl until smooth and creamy.
- Once the cakes are completely cool, place one cake layer on a serving plate. Spread a layer of frosting on top, followed by a layer of the macerated berries. Repeat with the remaining layers.
- Decorate the top of the cake with additional fresh berries and any other decorations you desire.
- Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld together.
